Here is a simple and healthy salsa that goes great on just about anything from burgers to grilled fish or quesadillas. Even great on a southwestern style hot dog! 

Eiteljorg’s Avocado Corn Summer Salsa

  • 1 ear of field fresh corn on the cob
  • 1 ripe avocado
  • 1 ripe heirloom tomato
  • 1 red bell pepper
  • ½ red onion
  • 1 lime (zested and juiced)
  • 2 tablespoon olive oil
  • 2 tablespoon chopped fresh cilantro
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper
  • 1 teaspoon cumin

Slice the corn off of the cob using a sharp knife. Cooking the corn isn’t necessary. Dice the tomato, avocado, bell pepper, red onion and toss in a small mixing bowl with the remaining ingredients. Mix and serve the day of your next grill out.
